5 Minute Poached Salmon
Let's take a break from all the sweets and fill our bodies with something that's actually good for you. This is my favourite quick and easy recipe. Perfect for when you want something delicious and healthy but you just don't have the time to cook.
1 cup of water
2 stalks Spring onions
Few Sprigs of Parsley
1 tablespoon Peppercorns (or freshly ground pepper works too)
Salt for seasoning
1. Season your salmon with a little salt on both sides.
2. In a pan over medium heat, pour in your cup of water, parsley, and 1 spring onion. No need to chop the parsley or spring onion.
3. Put your salmon in the pan, cover with the lid and leave for 5 minutes.
4. Take it out, pour some of the poaching liquid into the dish and garnish with some chopped parsley and spring onions.
Easy right? 5 minutes and if you can't be bothered to garnish then no chopping, it doesn't get any easier. I promise you, it is delicious. This works with other fish too and you can even poach chicken this way. But if you do, cut up the chicken and pound it thin so it cooks all the way through. Also, the chicken may take more time to poach.
