Happy Father's Day to all the dads out there! Who says breakfast in bed is exclusively for Mother's Day? Why not do something nice for your dad and make him these easy and yummy baked eggs for breakfast.
Lea & Perrin's
1. Chop up your mushrooms, tomatoes, bacon. For the quantities, have enough to fill your container, I used these individual ramekins. You want to have uniform sizes and quantities.
2. Fry up your bacon in a little oil, after 1-2 minutes, add your mushrooms and a dash of Lea & Perrin's. When your mushrooms start to brown remove from heat.
3. Create a layer of tomatoes at the bottom of your over proof container. Then layer on the celery, bacon, and mushrooms. I made a veggie version of this dish by leaving out the bacon. Top it all off with an egg. Put everything on a baking try and bake at 180C for 10 minutes.
