Sayote and Carrot Pasta

I had a healthy dinner over at my sister's house the other night and she cooked up this sayote and carrot pasta. You've heard of courgetti? This is essentially the same thing but with sayote and carrots, because where we live zucchini isn't always available at the supermarket. This is a great healthy alternative to regular spaghetti and she was generous enough to let me film her and share her recipe with us! Ingredients:

- 1 sayote
- 1 carrot
- 1 avocado
- 1 cup of peas
- 1 stalk of alugbati
- 1 stalk of mint
- 1 tsp olive oil
- 1/2 tsp salt
- Juice of 1 lemon
- Handful of sesame seeds

Directions:

1. Peel your sayote and carrot into strips with a vegetable peeler.

2. Cook you peas by putting them in a pot a cold water and bringing it to a boil.

3. In a blender or food processor, blend together the avocado, alugbati, mint, olive oil, salt, and half of your cooked peas. If you're using a blender, add 1/2 cup of water to get it to blend properly. 

4. Add a little olive oil to a pan and heat up the sayote and carrots. Add the blended sauce and mix well.
