Roasted Cauliflower Soup
And while we were doing that I cooked us up some warming Roasted Cauliflower Soup for lunch. Cauliflower is such an under rated vegetable. It's so hearty and jammed full of vitamins for you. It's actually one of the healthiest foods in the world. What I love about this recipe is that not only is it so tasty and easy to make, it's also incredibly filling.

1. Chop up your cauliflower, celery, onion, and garlic.
2. Put all your veggies on a roasting pan and coat them in the coconut oil, brown sugar, and salt and pepper.
3. Roast in a 400F oven for 1 hour.
4. From the oven let them cool for a bit and then blend with vegetable broth and water until creamy.
- 1 head of cauliflower
- 2 stalks of celery
- 1 medium sized onion
- 3 cloves of garlic
- 3 tbps coconut oil
- 1 tbps brown sugar
- 1 cup vegetable broth
- salt and pepper to taste
